Classic French Onion Soup

This French onion soup is easy-to-make with caramelized onions, vegetable stock, madeira wine, toasty bread, and melty gruyere cheese.

Thinly slice the onions, shallots, and garlic.

Sauté the onions with butter over low heat until they begin to caramelize.

After about 30 minutes, the onions should be slightly softened, but still colorless.

After about an hour and a half, the onions should be pretty well caramelized.

After about 2 hours, the onions should have a jammy consistency, be a deep golden brown color with a rich, sweet flavor.

Add in the wine to de-glaze the pan, making sure to scrape up any browned bits.

Add in the stock and herbs and simmer for about 30 minutes.

Divide soup into oven-safe ramekins or bowls.

Top with baguette slices to cover the surface of the soup.

Then cover the bread with shredded gruyere cheese and broil until melted.

Serve immediately and enjoy!!
