The best pan to use for this rice, is a deep, wide skillet with a tight fitting lid. However, if all you have is a pot that will work too!
Over medium heat, saute the onions, garlic, and seasonings in 1 tbsp of butter for 3-5 minutes or until fragrant and just beginning to brown. Add in the rice and olive oil and stir until the rice is evenly coated in oil. Saute for another 3-5 minutes or until the rice is just lightly toasted. Make sure to stir it frequently and don't walk away because it can burn easily.
Deglaze the pan with the white wine (totally optional but adds even more flavor) and be sure to scrape up any brown bits from the bottom of the pan.Then add in the water, cover with a tight fitting lid, and reduce the heat to low. Simmer for 15-20 minutes or until the rice has absorbed all the liquid and is nice and fluffy!
Black Beans
At the same time that I'm sauteing the aromatics for the rice, I have a second pot going for the beans.
In a medium sized pot, saute the onion, garlic, bell pepper, and jalapeno in 1 tbsp of butter over medium heat for about 5 minutes or until browned and fragrant. Add in the black beans, lime juice, and seasonings and give it a good stir. Cover and reduce the temperature to low. Let simmer until the rice is done cooking.
Mojo Chicken
Combine all the marinade ingredients and chicken, cover and marinate for minimum of 30 minutes or up to 2 hours.
I prefer to grill the chicken, but you can cook it however you desire. Chicken breasts are cooked through when the internal temperature reaches 165°F.
Grill: Preheat grill to 400°F degrees. Then cook the chicken for 5-7 minutes on each side.
Pan sear: In a lightly oiled skillet over medium heat, sear chicken on one side for 8-10 minutes or until golden brown, then flip and cook for an additional 6-8 minutes.
Bake: Bake chicken at 425°F degrees for 18-20 minutes or until cooked through.
Notes
This recipe uses a 1:2 water:rice ratio as that is the most common, however some types of rice (like jasmine) require more or less water. Make sure you adjust the water based on the type of rice you're using.
