This mixed berry compote is a delicious sweet berry sauce that can be used as a topping for your favorite breakfast or dessert! It's perfect poured over ice cream or pancakes, or stirred into yogurt. Made with frozen berries and sugar, this simple berry compote is ready in just 15 minutes!
Add the frozen berries to a large nonstick pot over medium heat. Add in the sugar, lemon juice, and fresh mint and stir to combine.
Once the fruit begins to break down, reduce the heat to medium-low and cook gently for 10-15 minutes stirring frequently (the longer you cook the compote, the thicker it will become). You can leave the pieces of fruit whole, or use your spoon to gently smash some of the berries.
Remove from the heat and transfer to a glass jar to cool completely.

Store in an airtight container in the fridge for up to 5 days.Freeze: Once the compote has cooled, store in a freezer safe container for up to 3 months. To freeze smaller portions, you can freeze in ice cube trays! Defrost in the fridge overnight before using.Reheat: This mixed berry compote is delicious cold or at room temperature, but if you want to serve it warm (like over pancakes) you can reheat it in the microwave in intervals of 20 seconds.Thicken: The longer you cook the compote, the thicker it will get. However, if you want to thicken it more you can create a cornstarch slurry with 1 teaspoon of cornstarch and 1 teaspoon of water, and add it to the compote while it's still cooking, stirring constantly while it thickens. Alternatively, you can add 1-2 teaspoons of chia seeds to the compote after removing it from the heat.
