This melty baked brie is a super simple but impressive appetizer for any occasion! It's topped with honey and pecans and goes great with bread, crackers, or fruit! Best of all, you can make it in just 15 minutes!

Ingredient Notes

You only need a few simple ingredients to make this melty baked brie with honey and pecans!

Wheel of Brie - You can use either an 8 ounce or 16 ounce wheel of brie!

Honey - The honey adds a touch of sweetness to the baked brie, but you could also substitute jam (like fig or apricot) or hot honey for a little heat!

Pecans - I love toasted pecans with brie but you could also use walnuts or hazelnuts!

Fresh Thyme - This is optional, but I love adding a few sprigs of fresh thyme to the baked brie!

Flavor Variations

  • Bacon Jam - You can use my homemade bacon jam recipe for an amazing sweet and savory combo!
  • Caramelized Onions & Mushrooms - If you prefer a more savory baked brie, this is the option for you! I love pairing caramelized onions and cremini mushrooms with cheese (I'm drooling).
  • Balsamic Roasted Grapes - If you've never roasted grapes, you are missing out! It brings out most amazing flavors and pairs perfectly with melty brie!

How to Make Baked Brie

Preheat the oven to 350°F.

With a knife, lightly score a grid pattern in the top rind of the brie. Alternatively, you can remove the entire top rind of brie.

Place the scored brie into your baking dish. Then top with the honey, chopped pecans, fresh thyme, and flaky sea salt.

I like baking the brie in this cute little brie baker, but you can use any ceramic baking dish! Or just bake the brie on a baking sheet lined with parchment paper.

Cover at bake at 350°F for 10-15 minutes or until the cheese is soft.

Recipe FAQ's

How much baked brie to make per person?

A general rule is 1-2 ounces per person, so an 8 ounce wheel of brie with serve about 6 people. You can use a 16 ounce wheel of brie to serve 12 people!

Tips for Success!

For best results I always recommend using weight measurements (especially when baking) because it's the most accurate. Kitchen scales are super affordable and also reduce the number of dishes you have to do! However, all my recipes also include US customary measurements for convince. Use this chart to convert measurements for common ingredients!

Substitutions: In all my recipes, I've included substitutions that I know will work, but I cannot guarantee results if you substitute ingredients that I have not recommended. [For example, granulated sugar and honey are indeed both sweeteners but they have very different properties so they can not always be swapped 1:1. Using honey in a cookie recipe that calls for granulated sugar will yield a giant mess.] In the recipe card you'll find links to the specific ingredients/brands that I use.

A note on salt: I almost exclusively use Diamond Crystal Kosher Salt because it's the best all-purpose salt for cooking and baking. If you're not using kosher salt, consult this handy guide for a conversion chart! When in doubt, if you're using table salt just reduce the amount by half for baked goods. When cooking, I prefer to under-salt because you can always add more! If you've over-salted, adding a little bit of acid (like lemon juice) can help.
