What is a London Mule?
I'm sure you've heard of a Moscow Mule which is an incredibly popular cocktail made with vodka, ginger beer, and lime juice! So a London Mule is just a fun variation that uses gin instead of vodka!
Since gin is a staple liquor in England, this cocktail is either called a London Mule or Foghorn. Using gin adds more botanical elements that pair amazingly with the spicy ginger beer!
Ingredient Notes
Empress Gin - You can't have a London mule without gin! My favorite gin is this stunning Empress 1908 Gin! It's micro-distilled in small batches with botanicals like juniper, rose, grapefruit peel, and butterfly pea blossoms for an aromatic flavor that just pairs beautifully with blackberries! Empress Gin gets its beautiful indigo blue color from the butterfly pea flowers and changes color depending on what it's mixed with! So this blackberry lavender London mule turns a lovely pink because of the acidity from the lime juice! Be sure to check out Empress Gin near you!
Lime Juice - Fresh lime juice has the best flavor, but you can use bottled if that's all you have.
Ginger Beer - Is it even a London mule without ginger beer? (Not to be confused with ginger ale). The slightly spicy flavor of ginger beer is the perfect compliment to the Empress gin! I love Trader Joe's ginger beer, but just use your favorite brand.
Blackberries - I prefer using fresh blackberries, but you could also muddle a few frozen blackberries if needed.
Mint - I love the flavor of fresh mint with blackberries
Lavender - You need culinary grade lavender flowers to make the simple syrup! I like to buy them in bulk to use in other recipes like these blackberry lavender cupcakes. But you can also buy lavender simple syrup if you don't want to make your own.
Simple Syrup - You can add as little or as much simple syrup as you like but it's totally optional if you prefer a less sweet cocktail.

How to Make Lavender Simple Syrup
I always make my own simple syrup for cocktails because it's so easy and paying for it seems silly to me! You can also add in different herbs or fruit for a delightfully flavored simple syrup.
- ½ cup granulated sugar
- ½ cup water
- 1 tablespoon lavender flowers
- Add the sugar, water, and dried lavender to a small saucepan over medium heat.
- Stir until sugar is completely dissolved.
- Let cool completely to room temperature, then strain into a glass jar and seal tightly with a lid.
- Store in the fridge for up to a month!
How to Make a London Mule
Add the blackberries and mint to the bottom of a cocktail shaker. Use a muddler to gently crush the blackberries to release the juices.
Fill the shaker halfway with ice. Then pour in the gin, lime juice, and lavender simple syrup.
Then gently shake until combined and chilled.
Strain into a glass over ice and then top with ginger beer.
Garnish with fresh blackberries, mint, and lime slices and enjoy!!

For this blackberry lavender London mule you just need a cocktail shaker and a muddler!
You can serve this London mule in a classic copper mug if you prefer! (I just used pretty glasses so you could fully see the colors and clearly I couldn't decide between different styles).
Garnish with fresh blackberries, fresh mint, and lime slices.

Empress gin gets it's indigo color from the addition of butterfly pea blossoms in the distilling process! It makes for a beautiful gin that changes color when other ingredients are added! Like pink with lime juice!
Of course not! I love the flavor profile of Empress Gin, but you're welcome to use whatever brand of gin you prefer in this London mule.
