What is a Mojito?
A mojito is a traditional Cuban cocktail that typically contains white rum, sugar, lime juice, mint, and soda water. The mint and sugar are muddled together for a light, herbaceous cocktail that's perfect for sipping on a hot summer day!
So this fig mojito is a fun twist on the classic! In addition to the mint, we're muddling fresh figs and then using vanilla bean simple syrup instead of sugar!

Ingredient Notes
You just need a few simple ingredients to make this fig mojito with vanilla bean simple syrup!
Fresh Figs - Depending on your grocery store/location, you can find figs all year! Some varieties are available in the spring/summer and others in the fall!
Fresh Mint - The combo of figs, mint, and vanilla is super light and refreshing!
Lime Juice - Fresh lime juice has the best flavor, but you can use bottled if that's all you have.
Vanilla Rum - I love the extra vanilla flavor from the vanilla rum, but you can also use regular white rum!
Simple Syrup - You can add as little or as much simple syrup as you like! I like my mojitos to be pretty sweet, but you can reduce the amount if you want more of the rum to come through. See my notes below for making your own vanilla bean simple syrup!
Club Soda - Mojitos are typically made with soda water, but I think this cocktail also tastes great with tonic water or ginger beer, if that's what you happen to have on hand.

How to Make Vanilla Bean Simple Syrup
I always make my own simple syrup for cocktails because it's so easy and customizable! You can also add in different herbs or fruit for a delightfully flavored simple syrup. For this fig mojito, I make a fun vanilla bean simple syrup!
- 1 vanilla bean (substitute 1 teaspoon vanilla bean paste)
- 1 cup water
- 1 cup granulated sugar
- Slice a fresh vanilla bean in half so that the seeds are exposed.
- Add the water, sugar, and vanilla bean to a medium sized saucepan over low heat.
- Cook gently over low heat for 10-15 minutes, until the sugar is fully dissolved and the vanilla bean has infused the syrup with flavor.
- Let cool completely to room temperature, then strain into a glass jar and seal tightly with a lid.
- Store in the fridge for up to a month!
- If you don't like the look of the vanilla bean specs, you can strain through a cheesecloth.
How to Make a Mojito
Place the fresh figs and mint into a sturdy cocktail mixing glass. Use a muddler to gently crush the figs and mint to release the mint oils and juice from the figs.
Then pour in the vanilla rum, vanilla simple syrup, and lime juice. Stir to combine.
Fill a glass with ice cubes and more fig slices if desired. Strain the mojito into the glass and then top off with club soda.
Garnish with fresh mint and enjoy!
Cocktail Serving Tips
For this simple vanilla fig mojito, you just need a muddler! If you prefer a more clear, clean cocktail, you can make the mojitos in a cocktail shaker and strain before serving.
