These peach bellinis, made with frozen peaches, prosecco, and triple sec are light, refreshing and the perfect summer cocktail! They're great for brunch or just sipping on a Wednesday afternoon (guilty). They're also great with my summery peach panzanella!
I use frozen peaches because they're easy (I always have them in the freezer) and make the bellinis cold and frothy, but fresh peaches work just as well!
What you need:
- frozen peaches
- triple sec
- prosecco
- blender*
- In a blender, puree the frozen peaches and triple sec until smooth.
- Pour ¼ cup of peach puree into each glass and top with prosecco.
- Garnish with peach slices and enjoy!
